December 7th Recipes
Today’s recipes are all healthy, delicious, and filling. Although it might feel like a lot, you can easily add a snack in the morning and another one in the afternoon.

Sweet Acai Bowl
As simple as blending a few ingredients together, pouring the mixture into a bowl, and adding your favorite toppings. Loaded with antioxidants, this Acai Bowl will boost your mood!
INGREDIENTS for 1 serving
10 grams Oats
10 grams of Almonds (crushed)
5 grams of Raw Honey
2/3 Banana
125 grams of Frozen Berries
10 grams of Baby Spinach
80 milliliters of Unsweetened Almond Milk
5 grams of Ground Flax Seed
10 grams of Chia Seeds
5 grams of Acai Powder
25 grams of Strawberries (sliced)
25 grams dark Chocolate (crushed)
10 grams of Chia Seeds
Place half of the banana, frozen berries, spinach, almond milk, ground flax seed, chia seeds, and acai powder into a blender. Blend well until smooth.
Pour into bowl and top with strawberries, sliced banana, and crushed chocolate. Enjoy!
Notes:
Get Creative
Top your acai bowl with any other fruit, nuts, seeds, granola, or nut butter.
Smoothie
Omit the chia seeds or add more almond milk for a thinner consistency. Leave out the toppings.
Vegan
Use maple syrup instead of honey.
Citrus Beet Salad
A delicious salad with roasted beets, that you can make ahead of time! This salad is light and tasty!
INGREDIENTS for 1 serving
1 Beet (medium, cut into quarters)
20 grams of Quinoa (uncooked, dry)
10 milliliters of Extra Virgin Olive Oil
1 Navel Orange (half juiced)
5 milliliters of Apple Cider Vinegar
1 gram Dijon Mustard
Sea Salt & Black Pepper (to taste)
15 grams of Baby Spinach
10 grams Walnuts
40 grams Chickpeas (cooked, from the can)
10 grams of Goat Cheese (crumbled)
5 grams Mint Leaves (chopped)
Preheat the oven to 190°C. Wrap the beet in foil and bake for 35 to 45 minutes, or until tender when pierced with a fork.
Remove the beet from the oven and once it is cooled, rinse it under cold water and peel it. Once it is peeled, thinly slice it.
Cook your quinoa on the stove according to package directions, and set aside.
Make the dressing by combining the olive oil, orange juice, apple cider vinegar, Dijon mustard, salt, and pepper in a jar. Mix well.
Add the quinoa to a bowl and top with chickpeas, baby spinach, beets, walnuts, goat cheese, and mint. Drizzle dressing over top and enjoy!
Notes:
Prep Ahead and Save Time
The beets and quinoa can be prepped in advance to make assembling this salad much faster. Beets can also be bought roasted and ready to use.
Dairy-Free
Omit the goat cheese
No Chickpeas
Use another protein instead such as tofu or cooked diced chicken breast.
No Quinoa
Use rice instead.
Leftovers
Store in an airtight container in the fridge for up to 3 to 4 days and enjoy cold.
Rice Noodles with Broccoli & Bell Peppers
This super simple and plant-based Rice Noodles with Broccoli & Bell Peppers dinner is on the table in 20 minutes.
INGREDIENTS for 1 serving
60 grams of Brown Rice Fettuccine
20 grams Tamari
5 grams of Maple Syrup
10 milliliters of Lime Juice
1/2 Garlic (clove, minced)
30 milliliters Water
1 Small Red Bell Pepper (sliced)
100 grams Broccoli Florets
10 grams of Raw Peanuts (chopped)
2 grams of Cilantro (chopped, optional)
Notes:
Leftovers
Refrigerate in an airtight container for up to five days.
Nut-Free
Omit the peanuts.
More Flavor
Add chili flakes.
Additional Toppings
Add additional vegetables such as edamame, snap peas, or mushrooms.
Cook the pasta according to the directions on the package. Once the pasta is cooked and strained, run cold water over the pasta to prevent over-cooking. Add back to the pot.
While the pasta cooks, in a small pot over medium-low heat add the tamari, maple syrup, lime juice, garlic, and water. Bring to a low boil. Add the pepper and broccoli and cook for 3 to 5 minutes, until cooked through.
Pour the sauce and veggies over the pasta and toss to combine. Serve with chopped peanuts and cilantro on top. Enjoy!
